Other Refinement: A-Train To Bacon Heaven

Take a 2 pound pork loin roast, hand rub it with Adobo spice mix and about 2 teaspoons of celery salt and crushed black pepper. Cover the top in sliced onions and then wrap the exterior of the roast completely with thick cut smoked bacon slices. Tie together with baking string.

Place in roasting dish over bed of sliced onions.

Cook uncovered over indirect heat for 30 minutes a pound at 350 degrees or until inner temperature is 170 degrees.

When done let the roast set for about 15 minutes. While it is resting take the juices from the roasting pan and transfer them to a sauce pan. Add about a half a cup of white wine and stir for about 5 minutes over medium heat until reduced about 20 pct in volume.

Slice roast loin into servings with garlic mashed potatoes and a veggie. Drizzle sauce over pork and potatoes.

Recommend a crusty sour dough bread for dipping and a nice chilled white wine of your choice. Recommend a Coppola '07 Chardonnay.
